Two Quick AND Healthy Snack Recipes -- Kid Tested and Approved

Let's be honest, it can be difficult to get kids to eat healthy and as parents we need quick and affordable solutions. Here are two truly simple and delicious recipes that my kids (and husband) devour every time.

Oat-Flour Pumpkin Muffins

Makes approximately 15 muffins


1 (15 oz) can of 100% pure pumpkin

2 eggs

1 cup gluten free rolled oats

1/2 cup peanut butter

3/4 cup honey

1 tsp baking soda

1/2 cup dark chocolate chips

2 tsp ground cinnamon

1 tsp nutmeg

2 tsp pure vanilla extract

Optional: 4 TBS ground flaxseed


1. Preheat oven to 375 degrees. Prepare muffin pan with non-stick cooking spray and set aside. 

2. Grind oats in food processor or blender until flour-like consistency. Pour into mixing bowl. Add all additional ingredients and mix well by hand. 

3. Fill each muffin tin to about 3/4 full. 

4. Bake for 18 minutes or until toothpick inserted into center comes out clean. Cool and store in airtight container. We prefer to keep them in the fridge and eat chilled.  

Monster Energy Bites


1/2 cup honey

1 cup peanut butter (creamy or crunchy) 

2 cups gluten free rolled oats

2 tsp vanilla 

Optional ingredients: 

1/2 cup dark chocolate chips

1/2 cup raisins or cranberries

1/2 cup unsweetened coconut flakes

1/2 cup slivered or sliced almonds or pecan pieces 

1/4 cup ground flaxseed

We don't really measure the chocolate chips. raisins, coconut, cranberries, or nuts. Just pour in whatever looks good. 


Stir all ingredients together. Mix well. Refrigerate until mixture firms up a bit (approximately 15 minutes). Roll into bite-sized balls and store in fridge in airtight container.
